Is there an ideal way to set up a project from an organizational standpoint? It’s one larger project w/ 12 workstreams that will each have a work breakdown structure.

Well there are too many variables and without context it will be difficult to help you. Depending on your project requirements, you can use Linked Fields, Single Selects, Attachments, Forms, and so on.
