Does the Appear.in Block have any access to the records?

We want to use Appear.in in our tables but want to make sure that Appear.in can’t access the records.

No, it has no access to records. It basically just operates like an <iframe> or a mini browser window inside your blocks dashboard that hosts an appear.in session. It does not operate any differently than using appear.in inside your browser. The person on the other end will not know that you are using appear.in inside of Airtable. The purpose of it is just the convenience of having access to browsing your base while in a video call without having to tile windows on your screen.
