Incident management for community support

Hi all.
I manage a charity based community support service set up at the beginning of lockdown which has volunteers performing tasks for the isolated and housebound. This is coordinated by a group of coordinators working from their homes on a shift basis. I looking to set up a basic incident management system but to be honest I am struggling to know where to start. I am tech savvy but new to Airtable, is there a template that would be a good spring board for me to develop for our requirements.
