Pivot table / cohort analysis for sales tracking

Hello,
We want to use Airtable to track our sales force. Every time they meet a lead they will write it down in Airtable.

For the sake of simplification let’s suppose each lead could be in one of these 3 stages: not met, met, won

We would like to do something similar to a cohort analysis in order to evaluate, after some months, how many leads travel from not met to met and from met to won.

We also would like to know the time required, on average, for a lead to move from not met to met and from met to won.
