Standard Operating Procedure

I have failed at several attempts to create a Standard Operating Procedure(SOP) in Airtable. I am looking to have Various Processes that an employee can choose from to create a series of tasks to complete based on that chosen SOP. I have searched in the templates and it doesn’t look like this has been done before. Any ideas how I could structure this?

I would also like the ability to add and alter SOPs once they are created.

I envision a main table with each employee and a list of the SOP’s they are in the process of and the tasks they need to do.
