Has anyone found a way of keeping a table in AirTable fully up to date with new users when a new person is added to the G Suite Directory (GAL)? Zapier does it with personal contact but I haven’t seen anything with the global directory.

Zapier doesn’t offer this feature, so I would check out the Google Workspace Admin integrations of Make.com, which lets you watch when new users are added (amongst other user-related functions):
Also, Make’s normal Google Contacts integration allows searching all the contacts in an entire domain directory, but I know that you’re talking about users, not contacts:

Third-party services can be used to integrate G Suite and Airtable. For example, you can use the Skyvia cloud service. No coding platform with a freemium version
