My son has just had major surgery and is now home to recover after a very close call and 2 weeks in hospital.
He is on a heavy medication regime and I need to do blood pressure, oxygen levels and heart rate recordings.
Wondering where to start with a base where I can just go to one section to fill in what I do at any one time.
Such as
7.30am, Med 1 + Med 3 + Oxygen level
1.30pm, Med 2 + Med 4 + Blood Pressure reading
And then have it all show up for easy access for the doctors. I have tried a few options but keep getting a little lost, I am not new to airtable, and use it for many things, but my current state is just making it hard for me to think where to start.

Hey, I'm glad your son's home and recovering. I'd love to help, and if you'd like, let's get on a free call and set you up? Here's a link. Given that you're quite familiar with Airtable we should be able to get something working pretty quickly if we work together on it. Can't imagine what you're going through and would just like to see what I can do to lessen the load
For the blood pressure reading, the thing about Airtable charts is that they don't let us do easily visible point readings and the practitioner will need to click on each point to see the actual reading which isn't great. I ended up putting stuff into Excel / Sheets to handle that instead
For the stuff you need to do, I think I'd create a Tasks Templates table and have an automation that ran once a day at 0100 that would find all the records in the Tasks Templates table and create them in the Tasks table, and then you'd mark them off / do data entry into the Tasks table every day

Regarding sharing:
You can easily share any view (from the data layer) or share any page (from the interface layer) with your doctors by clicking on the “Share” button in the upper right of the screen, and then choosing the “share publicly” tab.
Note that sharing a view (from the data layer) is currently more functional and more feature-rich than sharing an interface page, so I would recommend that path.
