In general, no. It is not possible to use an older version of Airtable.

If you are referring to the new homescreen experience, it is possible to revert back to the old homescreen. When you are on the homescreen, click your profile icon in the top right corner of the screen and find the option in the drop-down menu.

If you want to use the old version of the homescreen, you can do that. While viewing the homescreen, click your profile picture/icon in the top right corner of the screen and look at the menu items.
