I have an interface for Contacts with a linked record to Interactions.
The linked record is customized to display the required details.
When creating a new interaction, only two of the details are displayed. If I then click on that record after it's been created, I can then edit the additional details.
To add more fields to the form you are presented when adding a brand new linked record within an Interface, you will need to click on the linked record field in Edit mode > click on the Appearance tab > edit the Fields field to add/remove the desired fields.
