I would like to have 3 tabs for each page in my interface. I want Tab 1 to display fields A-M, Tab 2 to display fields N-Z, and Tab 3 to be "All collections" and display fields A-Z. Every time that I try to change the fields that are being displayed in the tab, it also applies those same changes to the other tabs.
How do I display different fields for each tab in the same interface page?

I don't think you can do what you're attempting.
The tabs element on a List interface page was built for filtering different sets of records with the same data/fields in view. It was not built to see different data for the same set records.
Your only option would be to create (3) different pages on the interface.
I suggest you request this feature on the "Product Ideas" board if you want to see something like it available.

As @Kenneth_Raghuna mentioned above, you can't do that with tabs.
However, there is a trick for doing this within one interface page if you are okay with using "record detail pages" instead of tabs.
@Kamille_Parks shows how to set this up on today's BuiltOnAir podcast episode.
