I have interface charts with titles like "How would you rate the clarity and thoroughness of this course?" and responses like "Extremely clear and thorough" that are cut off when I view the interface (so they look like "How would you rate the c..." and "Extremely clear and thoro..."). Clicking and mousing over don't expand them. I can't see how many responses there are because the number of responses is at the end of the response, which is cut off. There's a huge amount of white space around the chart. How do I make use of that space to display the data?

You can use the Heading section to update your title. It has more space for characters. But for the single select options, it is best to find shorter wording. Unfortunately there isn't a way to customize options on charts yet.
You can find the number of responses by hovering over the chart.
