I was wondering if it’s possible to choose which fields appear in the abbreviated list view when I click on the 3 dots next to a link to another record field?

Airtable pulls the field order from the very first view in the linked table, so you can customize the fields there.
(Unfortunately, since Airtable ALWAYS pulls from the first view no matter what, you can’t customize this for different purposes. That first view will always be used for ALL circumstances.)
