I have a form that is submitted daily by members of our team, and due to how the AirTable base was initially set up, it defaulted to GMT when our company is in EST, so when we default to 'todays' date, after 6pm EST it will jump to the next day. Is there a way to set up everything to use EST without messing up the data in our base?

Are your forms coming from Airtable or somewhere else?
If they're coming from Airtable, you can change the default time zone for any of your date fields by editing the field, turning on the time function, and then choose "use the same time zone for all collaborators" and then change the time zone.
