I added a number of titles and instead of adding them to the bottom of the records, airtable randomly interspersed them into the existing records and linked and unlinked other fields - I need to roll back the base like an hour

In addition to seeing if there is a snapshot, you should know that in Airtable the concept of row order is not fixed the way it is in a spreadsheet. The same records can appear in different orders in different views of the same table.
If there is no snapshot, or if restoring from a snapshot does not work for you, you may be able to use a combination of created time, last modified time, and last modified by fields to identify the affected records and manually make the necessary changes.
