My table is a transaction log including fields for dates, campaign, onetime/subscription.
How would I create a view or pivot table that displays the totals between dates, within a specific campaign or campaigns, for both one-time and subscription? Perhaps a dashboard with several tables?

You can do that in several ways. You can make a new view where you use the Group option to group the records by Campaign and Subscription, filter for specific dates.
You can also use the Chart Block or the Pivot Table Block

First, you can add a Grid View from the top left side.
Check this article on the Group By options
