Hi,
I am trying to understand how interfaces and users interact. I have a series of interfaces that I intend to have users edit the information for certain fields.
I have set up the interface pages to have the correct fields editable and I set up a user (different from the owner) so that I could check that it is working properly. When I go into it with the test user though set as an Editor, I am unable to edit the fields that I should be able to.
Can anyone please explain how this work, or how I should have the interfaces so that they can be edited by users?

Sounds like you're not having users edit the interface, but rather edit/add data the interface is displaying.
One easy to miss step is re-publishing your interface when you've made changes. If you published the interface and then went and turned certain fields editable, you need to publish again for those changes to enact (I occasionally forget on this and it puzzles me for a moment haha).
If that's not the problem, then we could use a bit more about your interface type as record review vs list vs blank builds can all be implemented a little differently.

Hmm try checking whether it's editable even when you're on the Owner level account? That would at least help you rule out whether it's a user level issue, i.e. if the Owner account wasn't able to edit the fields either then that'd be something new to investigate
