Add notification based on a look-up field

I’m working a work intake table for my team. We’re all in the system as collaborators. We want customers to submit work requests through a form, but don’t want them to have to identify the collaborator in the form. Customers are asked to identify the service with which they need help, for example, Amazon Web Services. The Services field is a look-up field that ties to a list of services in a separate table in the base.

My questions is, can I somehow make Airtable send a notification to a specific collaborator by adding, for example, @Jason to the service name?

I’m a customer who wants to submit a request for help with Amazon Web Services. I complete the form and include “AWS @Jason” from the lookup table.

Would Jason get notified that a task has been added? Would the system identify this as an @ or would it be considered standard text with no notification sent?
