Is it possible to show a pre-filled form, so if a user has filled out a form and then needs to go back to make an edit, they can do so via the same form and not grid view?
Currently I don’t see a way to handle this.

No, there’s not a way, with Airtable’s own functionality, to edit a record through a form. Forms are only capable of creating new records.
What you are wanting is only possible by creating custom forms with calls to Airtable’s API.
