Airtable’s Google Docs “Document Automator” automation action is extremely limited.

Amongst its many missing features, it does not support adding attachments such as images or photos to documents.

You would need to turn to external tools for creating documents with images. Here are a few to look at, and there are probably many more that I am not listing here:
