Using an Automation, there’s only a “Create Jira ticket” step available, not “Update Jira Ticket”. You can of course always update Jira using its API and an Airtable Automation’s “Run a script” action, but that requires some knowledge of Javascript.
For a no-code/low-code way of doing this that doesn’t require any knowledge of Javascript, I highly recommend using Integromat’s Jira integration:
