Hide field options

Is there a way to hide options for a field? We no longer want users to be able to select these options but still keep the past records intact. For example an the field Responsible Party has as an option Vendor. Our company is not longer using vendors and we do not want users to see Vendor as an option. If we delete Vendor as an option from the field Responsible Party, Airtable removes vendor from all the records. We then loose that history. Is there a solution to this issue beside creating a new copy of the base.

I don't think so I'm afraid.  The only place one can limit options is inside a form:

You could attempt a workaround by converting your select field into a linked field to another table?  That way you could limit the selectable options to a view where you've filtered out the "Vendor" record?
