But I am afraid about publishing and licences.

+15My app that’s in the Marketplace uses a 3rd party library, so yes.
As @Kamille_Parks says, it’s OK from Airtable’s point of view to include 3-rd party libraries, however, from what I see, both FancyGrid and HighCharts require purchasing a commercial license:
