In fact I would define a unique ID per record, so it would be possible to take that ID as a unique identifier to update an existing record.
For example: I have a record without a «leaving» date. And in now want to ad such a date trough a airtableform with entering this unique ID i have to know and the date i want to ad.

However, it is possible to achieve a partial solution by using a form on a different table to collect the updated data (especially if you can input a unique ID - or for example an email address). To get this to update your main record, you can then use Zapier, triggered by the new record, to find and then update the original one.
An alternative would be to use an external forms app to collect the data - and use it’s Zapier trigger to do the same thing.
