What is a good website to parse data from a pdf into airtable. For example if I wanted to parse info from a rental application (contact info, lease info) into airtable what is the best website to do this

Your best bet would be to signup for an account with PDF.co, and then you would use Make's PDF.co integrations & automations to parse your PDF data into Airtable (in conjunction with Make's Airtable integrations).
If you’ve never used Make before, I’ve assembled a bunch of Make training resources in this thread. For example, here is one of the ways that you could instantly trigger a Make automation from Airtable. I also give live demonstrations of how to use Make in many of my Airtable podcast appearances.

Someone mentioned they fed a PDF into the AI field and it managed to extract all the data they needed so it might be the simplest option? Not too sure how pricing would work for that though

You might want to try Airtable AI's new PDF feature. With it, you can upload PDFs and have Airtable just pull out the info you need.
I attached a screenshot of what that might look like.
The one drawback is that for long PDFs it burns thru a ton of AI credits, so it can get expensive.
