Hello,
I'm looking for a task list where I can set interval dates for a task and then have the base automation send an email reminder every so often to the individual to complete the task. Or instead (in addition) have a dashboard where this data could be displayed in some capacity (perhaps filtered and sorted by job tasks that are overdue).
I also want the user to be able to log in and check when they completed the task for a certain date.
Let me know if you have any advice on this!
Thank you!

Check out using record templates for the record creation: https://support.airtable.com/docs/using-record-templates-in-airtable
I'd recommend a dedicated 'Tasks' table where the fields are "Date", "Done", "Notes", "Assignee"
For the emails, you'd have an automation that triggered whenever today's date matches the "Date" field value (or whenever you want, in relation to the "Date" field value) to send out that email
For the dashboard, that's really subjective and I'd recommend playing around with Interfaces, and if you hit any issues to create a thread in the forums and ask for help if needed
For the login, it depends on a couple of factors. The simplest version of this would be giving them full access to the base to update everything which you can accomplish on a Free plan. If you need to restrict access, then you'd either need to use a paid plan or a workaround involving using inbuilt forms (https://support.airtable.com/docs/use-case-update-records-via-a-form) or the simpler option of using Fillout.com (https://www.fillout.com/)
