I am not sure if this is something that should be a feature suggestion, but i would like to make the field in interface editable dependent on a select field that I call “STATUS”. So that certain fields can be edited only when the STATUS is set to certain items.

This is a great suggestion, conditional editable fields all over Airtable would be very welcome.

At the moment I overcome this by creating a duplicate of the page that is editable, and adding a link to the editable page on the non editable page. You can make your link field be a formula that is set by the status option.
