Hi, I would like to be able to give each of my planned 400 fields a Description that can be sorted alphanumerically (so I can sometimes view the fields in a specific order I want to see them in, which the Field Names themselves are not necessarily already in. Is there a way I can do this when importing a 400-column table template from Excel, or is the only way to add Descriptions one-by-one once I've got the columns all set up in Airtable?
Thanks!

When importing from Excel, you cannot set field descriptions.
You may also want to know that there is a limit of 500 fields per table.
You can update field descriptions using scripting.

Thanks! Can you please point me to what the "scripting" solution means or looks like?

Scripting is using Scripting Extension.
If you understand this documentation, you can try writing a script yourself. If it doesn't, you might want to talk to a developer who writes Airtable scripts.
