I’ve got a date field with time, and if it’s after 8pm, and I do a formula to show the date, it gives the day after.
Ex: Date 3/23/18, 6pm = date shows 3/23/18
Date 3/23/18, 8pm = date shows 3/24/18

Check the formatting of your date fields to make sure ‘Use the same time zone (GMT) for all collaborators’ is toggled off (or on, as the case may be). The problem you’re describing is almost always indicative of someone in the Western Hemisphere with GMT time enabled.
