Github Pages, API Key and Serverless Functions

Hi there,
Looking to create a static webpage using github pages, with Airtable as a database. Has anyone here have a solution for keeping the API key out of the static files? I’ve read that using a serverless function as a proxy with a jwt can work; but not sure where to start with that.
