So I see that there is a feature for choosing the marker color in the map block based on a select field in the table. However, none of the fields in my drop down list are able to be chosen as the “select field.” What is required in order for me to select an existing table field to determine the color of that row’s map marker?

One of the fields (columns) in your table must be of the “Single Select” type, and the options in your “Single Select” list must be colored.
Like so:
Then you will be able to choose that field (in my case, “Bid Accepted”) as the determiner of the color for the map markers.
