Is there an easy way to remove the color highlights from an automated report? I want the colors to exist in the base, but when an email goes out in grid form I'd like the color highlights for different categories to not show up.

Use a formula field that just repeats the field value. Then include the formula field instead of the actual field.

Thanks Kuovonne - it's a good workaround and the enterprise support also let me know this was the only solution to-date. Hopefully they put a more global solution on their development backlog since this is not super scalable. Thanks for the help!!
