I am new to Airtable and need help or confidence about the process. I have created two interfaces, an intake form and a directory to organize  the data collected from the form. I am unsure of how the form data populates the directory. Am I missing something?

Airtable’s forms only allow you to add new records to a table.

So, whenever you submit a form in Airtable, it will always create a new record  

However, if you want to update an already-existing record with a form, you would want to use Fillout’s advanced Airtable forms for that.
