I can’t be the only one who finds the edit field dialogue box for single and multiple select fields outrageously small, can I? If we have two or three dozen options, or even more, how are we supposed to manage them when we can only see three or four at a time? Is there an extension or something that helps with this?

Airtable doesn’t limit you to seeing only a few options. Airtable will show you up to 10 options at a time, as long as your screen’s resolution is tall enough.
If you can only see a few options and you have a lot of vertical space to spare, then maybe you have a browser extension installed that is interfering with Airtable.
However, if you have dozens of options, you may want to consider working with linked record fields, instead of single-select fields or multiple-select fields.
Then, you can view all of your options on their own interface page or on their own data view.

Absolutely. That’s exactly how you would want to handle cities, states, and countries.
You’d create a new table with a City field, a State field, and a Country field.
Then, from the main table, when the user selects a country, you may want to only show them the associated states. Then, when they choose the state, you may want to only show them the associated cities.
You can also do it in reverse… if they choose a City, it automatically looks up the state and the country for them. You would do this using lookup fields.

For sure not ideal. However, for a quick solution to your issue (whilst you build towards Scott’s solution) you might just want to zoom out on your browser which will allow you to show several more options (e.g. screenshot below has been taken at 50% zoom out).
As a corollary question, is it possible to have a longer selection modal that shows more than 6 options when selecting from a Multiple Select menu ? ( Even when Zoomed way out )

It does show more options on my side when I zoom out. Having said that, if you are looking to expand that modal unfortunately I don’t think that is possible.
