I want to create space in between weeks of records so that it's easier for the client and me to view. Attached is a photo how it's currently set up, but I noticed when I skip a record, it still documents it as "blank." So when I group it by week, those blank records are kept together, but I don't want them to be shown at all--if that makes sense.

Please help.

Have you thought about doing a formula field that will extract the month from your date field? I had a similar issue, so I created a formula field that would extract the Month and the year from the date so that it would look like "January 2023." Then I used that field to group the records. If that sounds like it would help you, I can get you the formula I used tomorrow.

Will it leave the field blank?

No. The field will be the “Month” from your date field. You can then group the field by the “Month field. When you use groups, it automatically sections each section so there is space between the groups.
