By the shape of those cells I am pretty sure those are single/muiti-select fields. You can achieve that look by using those type of fields and picking different color for each option, if using that field type is Ok with your workflow.
It looks like this:
And than in table like this (Similar to screenshot you posted):
+3As far as I am aware, you can only color single and multi select fields like that, by actually selecting color for each individual option from field configuration menu.

All plans have the ability to use colors in single/multi-select fields. However there are only a limited number of colors available in the free plan.
