Items that are shown there are connected to the layout of fields in the linked (source) table.

If you dont want to reorder fields in source table, you can create a new view of source table that you will use just for this purpose, then reorder / hide / filter fields in that vew in the way that you like.

After that in linked field settings turn on “Limit record selection to a view” and choose this newly created view.
