I would like my base's users to be able to create interfaces so that they can work with the data exactly how they need, however I do not want to grant them creator privileges. I also do not want them to be able to share interfaces (or event better if possible, share only within our organization). Is this possible?

You can restrict the ability to share interfaces, and here's Airtable's guide on it: https://support.airtable.com/docs/managing-and-sharing-interfaces#restricting-interface-sharing
If you're on a Business / Enterprise plan you can set your interface to be available to anyone in your org too

Thank you for the clear answer! Understood.
I think it decoupling interface creation permission from owner/creator permission would be great.
I don't want to give all permissions to users, but would love for them to be able to build the best interface for their usage.
