I have a multiple choice single select question and each answer is a couple of sentences long so the end words are cut off. Is there any way to extend the character limits for options? If not, is there a suggested workaround so I can allow my clients to read the full description of the option?

There is no way to extend the character limit for options in select fields.
If you are using a form, you can put longer descriptions of the options in the question description and then shorter keywords in the choices.
