When I go to choose a related record, I see the name of that record.

Under it I see several other columns that provide more information, some of which are redundant to the record name. Is there a way to customize this to select the fields underneath (I would love to show the related Notes field, as example)

Thanks but see my attached screen shot, if I move the fields in Grid view, they will change what is seen in the pop-up? Please confirm, I am not sure that is the same thing, thanks again.

I'm not sure, but I think so. Sorry I cannot test it now, why don't you try to do it yourself?

Yes I moved the notes field to column 2, but no effect on the selection menu in the related table

It seems like you are selecting linked records, and you limit selection to a view Approved Assets. So, you should move field in that view, not in Grid view (which defines order of fields when you don't enable 'Limit selection to a view')
