We have upwards of 8 forms for a single table, so it’s definitely possible! You can so make fields are only visible under certain conditions (e.g. fields visible only when applying to specific jobs) instead of having different forms if you prefer.
Thank you. I had thought about that, also, but there are so many differences, I felt like it would be easier to just have separate forms.

Yes you can have as many forms as you want using the same table. Form is just an interface (even legacy form view) used to populate data for next created record in table. When you change or delete the form, it doesn’t affect information that already entered in the table.
Also, in form you can have different set of questions, using conditional fields that can be visible or not, according to the data you entered/selected in previous questions. So, each of these forms might not be very long. But if you want to populate data in the same table, the table will be LONG, or better say WIDE.
But you can create several views according to each set of relevant fields.

Airtable has a maximum of 50 forms per base. (You can get more forms by using the old “form view”, but those have been deprecated.)
