Unfortunately, Page Designer is very limited so you can’t do what you want to do with it.
I would recommend taking a look at Documint or DocsAutomator, which were specifically designed for creating documents from Airtable.
Alternatively, you can use any document creation app that you would like (Microsoft Word, Google Docs, Formstack Documents, etc.) with Make’s advanced automations & integrations.
You can even use Make to send your Airtable data to an invoicing app like QuickBooks or Stripe or Xero.
If you’ve never used Make before, I’ve assembled a bunch of Make training resources in this thread. For example, here is one of the ways that you could instantly trigger a Make automation from Airtable.
I also give live demonstrations of how to use Make in many of my Airtable podcast appearances. For example, in this video, I show how to work with Airtable arrays in Make.

C’mon AIRTABLE, this is ridiculous. We have to predetermine the table depth in Page Designer? That’s not even remotely useful. Please put in a little love to this extension to just fix the minor issue. No wholesale changes, but these fundamentals need to be fixed.
