This would be really useful in CRM-based apps by more responsively tracking contact attempts - eg hit phone button and it adds the tag ‘Called’ with a time and date…

While there isn't a native feature built into Airtable to trigger an automation in this way, this is a fantastic idea! A way to trigger an automation based on tapping the phone, text, or email icon in the mobile app would be a great addition to the product. I encourage you to post this idea in the Product Ideas section as I am sure others might be looking for similar functionality.
