Is it possible to change the sent from email, from the default of automations@airtableemail.com to something of our choice? Or by a per project basis?

+31Only the ‘Send Gmail’ and ‘Send Outlook’ actions allow us to change the emails I’m afraid:
Airtable’s Send Email action allows us to change the ‘From name’ if that helps? That works pretty will for Gmail filters
