you can't get in-app notifications for changes to records. In-app notifications only work currently for when a user is added to a record, when a user "@"'s them, or when there is comments in a record they are currently watching.

That being said, you can setup an automation to watch for changes to all fields, or specific fields, and to send an email or a slack to you, or any of the people assigned to one or more fields in the record.

I found a workaround for now. I made a last modified time column and just created a grid email where to gets all the last modified yesterday. That way we can get a summary email of what was modified yesterday.
