Unfortunately I’d be surprised if you find a template for this specific use case.
Having said that, did you give a shot yourself? Did you stumble upon specific issues or challenges? If so, make sure to post them here and I’ll help you out.
You might end up with only one table.
E.g. Items table.
Fields: Item name, Description, Attachment, Value
If you need something more robust, you can have a second table called “Quotes”.
You can link one item to multiple quotes found online, to back-up your “value”.

The only issue I could see running into with this is that Airtable doesn’t have a lot of export functions that maintain images alongside your records. You mention sending it to your insurance… are they going to be cool with a link to a read version of a software they probably don’t use?
Considering you want wide compatibility, probably only need one table, and want to include images in the single file… This might be a purpose better served by Excel. Ugh, I feel gross now 🤣
