On my form, I have a couple of questions linked to a single select field.  It's automatically naming the button and I don't know how to edit that.  Instead of Add record or Add show, I just want to change it to Add Committee Preference.

Ah, it automatically titles that button according to table record name designation. When you name (or rename) your table you can select a term to call each record, but those are from a pre-defined list. ‘Show’ is on that list, hence the “add show” but ‘committee’ is not.

@TheTimeSavingCo  compiled the terms into a table you can find in this thread.

Thank you.  Is there a way to edit them after the fact to something that is in the list that makes more sense for our needs?

Yep, if you click the ▽ next to the table name and select rename, it’ll let you rename both the table and the record term. Just try to find a record term that works better as “Add _____”

Thank you!  I never would have looked there, but I changed them all to Group.  Makes more sense.

Just to add, if you are not finding a suitable option for your record name in the predefined list, consider checking out Fillout. It completely allows you to customize your form, including editing the button text exactly as you want.
