I’m looking for an API or automation to remove sharing from all collaborators of a workspace with a single click.

I don’t believe such a thing exists. If you find one, please share.
None of the public APIs provide a method of editing the list of collaborators. Plus, it can be difficult to find all of the collaborators in a workspace. For example, the account page of a workspace does not list free (read-only) collaborators that are added to only an individual base.
