Ah, I do’nt think this is possible with a formula I’m afraid.  We can see the totals at the bottom of the screen like this:

And if we want to actually use that number, say in an email or something, then we’d need to create a new table and have a single record that’s linked to all the data records.  This would allow us to create a rollup field like this:
