This is the name of the linked record field on which the rollup is based. Usually people name the linked record field after the linked table, but not always.
It looks like you have a linked record field named {Candidates} that links to the table [Applicants]. If you want the name of the field to match the table name, you can change that by renaming the {Candidates} field.

In your screen capture, the name of your linked table is eRates-R]. The name of your field that links to that table is {Rates}. If you want the name of the field to match the table name, you need to find that field and rename it.
