For future readers, reordering fields in a List view can be done via the ‘Customize ows’ field:

And reordering fields in a Grid / List Interface can be done by clicking into the fields section, then going to the ‘Fields’ dropdown on the right:

This would be great. Plenty of different posts on the community with the same need/want.
